Chiles en Nogada


The famous dish from the movie "Like Water For Chocolate"
(for 6 persons)

fresh goat cheese (like Chavroux)

whipping cream

preserved citron

raisins

ground beef

PREPARATION

Roast the poblano chiles on all sides (this works the best in the oven). Cover them with a wet towel, peel them and remove white seeds if there are any, but take care that the chiles don't fall apart! Remove the pomegranate seeds from the fruits.

Grind the nuts for the sauce and blend them together with the cheese and the whipping cream to a thick sauce.

For the stuffing it's best to take a piece of marbled beef instead of ground beef. Cook the beef with garlic, pepper corns, and a bay leaf for about an hour in broth. Afterwards mince the meat very thinly. For the rest of the stuffing chop onion, apple, and peach. Mince the tomatoes. Mix well with the preserved citron and the raisins. Season to taste.

Stuff the chiles carefully with the stuffing and reheat in the oven if necessary. Pour the sauce over the chiles and sprinkle with pomegranate seeds.

White rice goes best with this dish. Please note the national colors of Mexico!
